It is cold out! I don’t know about you, but I’m still in denial and forbid to turn on any heat (keep your eyes open for our blog post on heating options next week). Instead, I’ll find different ways to get myself warm…lots of hot coffee, a hot shower, a long work-out, and a really great soup. Here’s a recipe we love that warms you right up, is healthy, easy and makes your house smell incredible. Put it in the crock pot in the morning and when you get home from work, you’ll walk into deliciousness. (Anyone else love their crock pot as much as me?!)
Looking to make soup today but freeze it for the future? I will make a soup, spray a muffin tin with cooking spray, pour the soup into the tins, place in the freezer and then pop them out and place them back in the freezer in a Ziploc bag. When I’m in the mood for soup, I grab a couple of “muffin tin” soup pockets, defrost and enjoy. It’s a great way to freeze soup and use as needed. Also, it’s an easy way for kids to have a healthy lunch without you running around in the middle of the day to make something. Just defrost a frozen soup tin or two and lunch is served!
